DIAL M FOR MERMAID

 Mergirls:  This cake is delicious.  I just had to post it for you.

TRISHA YEARWOOD KEY LIME CAKE

■1 3-oz package lime-flavored gelatin
■1⅓ cups granulated sugar
■2 cups sifted all-purpose flour
■½ tsp salt
■1 tsp baking powder
■1 tsp baking soda
■5 large eggs, slightly beaten
■1½ cups vegetable oil
■¾ cup orange juice
■1 Tbsp lemon juice
■½ tsp vanilla extract
■½ cup Key lime juice (from about 25 small Key limes or 4 large regular limes)
■½ cup confectioners’ sugar

1. Preheat the oven to 350°F. Grease and flour three 9-inch-round cake pans.

2. In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda. Stir to mix well. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide the batter evenly among the 3 pans and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops of the layers or inserting a toothpick. Cool the layers in the pans for 5 minutes, then turn them out onto racks.

3. While the layers are still hot, mix the lime juice and confectioners’ sugar and pour it over the layers on the racks. You can pierce the layers with a fork to allow the glaze to soak in better. Allow the layers to cool completely as you prepare the icing.

CREAM CHEESE ICING

■½ cup (1 stick) butter, room temperature
■1 (8-oz) package cream cheese, room temperature
■1 (1-lb) box confectioners’ sugar
  You can use lime zest and lime juice in the frosting.

1. Cream the butter and cream cheese. Beat in the confectioners’ sugar until the mixture is smooth and easy to spread. Spread the icing between the layers and on the top and sides of the cake.

Note: The cream cheese icing is optional. This cake is beautiful and tastes great with just the glaze poured over it. Serves 12.

 

Welcome.  DIAL M FOR MERMAID  is my newest blog.  Mermaids do exist.  Don't let not having seen one deceive you. They are sexy, have attitude, love to gossip and make it a point to stay informed.  If you don't want honesty, then don't ask a mermaid.  They will tell you straight up what the big splash is about,  all the while flippin' their fins.  Mermaids are really good spirited, but just don't try to pull the scales over their eyes.  You will be in big trouble if ya' do.  Oh, and did I tell you mermaids love themselves some sailor boys.  But, with time they have changed.  They no longer lure sailors to their watery graves.  Instead, they put on their best scales and lure them to:) well I will zip my lip..........


Let's set the records straight.  They do walk on land by day and dive back into the deep blue just when then sun is sinking low.  So, actually, they have the best of both worlds.  Well, in some ways that is true and in others it is not.  Pollution, pollution, pollution, is affecting both their worlds.  It is hard hard to sea beneath the Deep Blue.    Pollution has clouded their sparkling blanket of water and trash invades their space.  Did I mention they are losing a lot of their friends?  Dolphins are their best buddies but pollution has taken so many of their friends away, and those cruel humans are taking many marine animals for profit.  

Dial M for Mermaid if you want to engage in some girl talk.  Are  your boyfriends or  husbands doing things that seem a little fishy to you?  Mermaids have this uncanny knowledge about love and men.  It is a long story, but if you want some of the best advice on love and war, just Dial M For Mermaid!!!  They will tell you exactly how to make your man walk the straight and narrow.

Mermaids are so amused these days.  They are laughing their fins off.  As I stated earlier (oops I wasn't supposed tell once, let alone twice).  They shed their fins at the crack of dawn and mingle with the best, unknown to any as to who they really are.  But, back to the amused part, one of my mergirls told me she was in a certain state and found this beautiful lady making mermaid tails.  I believe she said it was Shell Tail Labs or something close to that.  She also said the lady refers to herself as Mermaid Shelly???  We are all wondering if this Mermaid Shelly is some kind of undercover mermaid.  If I get more facts on that one, I will let you know.

Dial M For Mermaid because you never know what you might find out.  There will be lots of saucy things here.  However, we do have class and don't care for profanity, racism, or anything that would be offensive.
